1 Package Original RightRice
2 boneless, skinless chicken breasts, grilled
4 cups arugula
1 cup cherry tomatoes, sliced
1 cup cucumbers, diced
1 cup pickled onions
4 Tbsp CAVA Tzatziki
4 Tbsp CAVA Hummus
1/4 cup crumbled feta
Pita bread or pita chips, for serving
Cook the RightRice according to the package instructions, then cool down to room temperature.
Prepare veggies and chicken. Once RightRice reaches room temperature, split evenly among four bowls.
Top each bowl with 1 cup of arugula, ¼ cup of cherry tomatoes, ¼ cup of cucumbers, ¼ cup of pickled onions, and 3-4 ounces grilled chicken. Finish with 1 Tablespoon hummus, 1 Tablespoon tzatziki, and desired amount of crumbled feta.
Serve with a side of fresh pita bread or baked pita chips.
